I am back from a several months long hiatus (sorry!) to bring you these beautiful small batch matcha brownies. I’m quite specific with the texture of brownies I like, and the other recipes I’ve tried did not come out as chewy as I wanted them. So I decided to make my own. I’m also only baking for myself and my roommates, so I needed a small batch recipe, and this one is perfect. It is delicious, has a strong matcha flavor, is easy to make, and has the perfect chewy texture without making a ton of food that you won’t be able to finish. Try it and let me know what you think!
Ingredients:
- 3/4 cup all-purpose flour
- 1 tsp matcha powder (use culinary or ceremonial grade— the higher quality matcha you use, the more green your final outcome will be)
- 1/8 tsp baking powder
- pinch of salt
- 1/4 cup unsalted butter, melted
- 2.5 oz white chocolate, melted
- 1/4 cup + 2 tbsp light brown sugar
- 1 tsp vanilla extract or paste
- 1-2 drops of green food coloring (optional)
- 1 large egg
- 1/3 cup chopped white chocolate
Directions:
- Line a 9×5 loaf pan with parchment and set aside.
- Mix the flour, matcha powder, baking soda, and salt in a small bowl until well-combined and set aside.
- In a separate bowl, microwave the butter in 30-second increments until melted. Add in the 2.5 oz of white chocolate and return to the microwave, again in 30-second increments, until the white chocolate and butter are both melted.
- Add in the brown sugar and vanilla extract/paste and mix well. If using food coloring, add it here as well.
- Add in the egg and mix well.
- Add in the dry ingredients and fold until well-combined. A few streaks of flour are okay here, as you will keep mixing when you add in the white chocolate chunks.
- Add in 1/3 cup of chopped white chocolate. Mix one last time until well-combined.
- Transfer batter to the pan. Let sit at room temperature for 15-20 minutes so that the batter has a chance to thicken. While you wait, preheat oven to 350 F.
- After 20 mins, top the batter with a sprinkle of granulated sugar and some flaky salt. The sugar will give a crackly crust on top of the brownies after they bake, while the salt is a flavor enhancer that will make the final product have a stronger matcha flavor. Do not skip, I promise it won’t be too salty!
- Bake at 350 for 25-28 mins on the middle rack. Edges will be set, and a toothpick inserted in the center will only yield a few moist crumbs or come out clean.
- Let cool in the pan for at least 10 minutes, then lift the parchment out of the pan to let the brownies cool completely. Once completely cool, slice into 8 and serve.
