Hello! It’s been a minute since my last post but I am back, and this time, with some fresh summer fruit. I love stone fruit season, and I wanted to incorporate it into something easy that would let the flavor of the fruit shine through. I used nectarines for this, but you could use peaches, apricots, plums, or any fruit you wanted in their place, and the strawberries can be replaced with any other berry you have. This recipe makes two servings – I used a small cast iron, but you can also do this in two ramekins. Enjoy!
Ingredients:
Fruit:
- 1 cup diced strawberries (or any berry of choice)
- 3/4 cup diced nectarines (or peaches, apricots, whatever you want!)
- 1.5 tbsp all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp lemon juice
Crumble:
- 4 tbsp softened unsalted butter
- 1/4 cup + 2 tbsp all-purpose flour
- 2 tbsp chopped walnuts
- 3 tbsp brown sugar
- 1 tsp ground cinnamon
Directions:
- Preheat the oven to 350 F.
- For the fruit, combine the washed and diced fruit with the flour, sugar, and lemon juice. Mix well and set aside. Try not to let it sit too long, as it might get too liquidy. If this happens, just add a bit more flour before assembling.
- For the crumble, mix the flour, walnuts, brown sugar, and cinnamon in a bowl. Then add in the softened butter and use your hands to work it in. The mixture should be well-combined and be able to be easily crumbled.
- Add the fruit to a small cast iron, or split into two ramekins. Cover with the crumble mixture. Place onto a baking sheet to catch any juices that might bubble over while baking.
- Bake at 350 F for about 35 minutes, or until the fruit is bubbling and the top is golden. Serve warm with ice cream, if desired.
