A typical Armenian breakfast is a very fresh and flavorful spread. Coffee or tea are essential, along with a spread of cheeses, bread, vegetables, eggs, herbs, and cured meats. For some sweeter options, you’ll also commonly find jam, honey, butter, and walnuts. This spread includes some of my favorite foods, and I often just eat them for snacks too.

The cured meat you see here is called basturma, which is beef that’s been seasoned with chili, garlic, and fenugreek and then air dried. The seasoning gives it a distinctive red color and delicious taste. The bread I’m using is called lavash, which is a super thin flatbread traditionally made in a tandoor. You can find lavash pretty easily these days at most supermarkets, and basturma can be found at local shops or even online.

My favorite way to eat this kind of breakfast is by dipping the lavash in the runny egg yolks and making little wraps of the lavash, basturma, herbs, feta, and vegetables. If you’re able to find the ingredients, I really hope you give these Armenian favorites a try.

Ingredients:

  • Tea or coffee
  • Basturma
  • Fresh herbs (I used basil and tarragon)
  • Sliced tomatoes
  • Peeled and sliced cucumbers
  • Sliced feta
  • Eggs, cooked to your preference (I like sunny side up or soft boiled)
  • Lavash

Directions:

  1. Prepare your coffee or tea, and cook the eggs to your liking.
  2. Prepare your herbs, feta, and basturma, and slice and salt your cucumbers and tomatoes. Arrange on a serving platter with the lavash.
  3. Enjoy! The best part about this is it’s just an assortment of foods that require little to no cooking, so the list of directions is very short.
