For me, the best desserts are 1) fruit-based, 2) not overly sweet, and 3) easy to make, and this mango mousse meets all those criteria. The main ingredients are heavy cream and mangoes, along with some flavorings and gelatin to help the mousse keep its shape. It takes maybe 5 minutes of effort, and honestly, the hardest part is letting it chill in the fridge before you eat it. Also, look at that texture:


This recipe makes 6 servings and can be scaled as needed. Full instructions are below:
Ingredients:
- 2 cups heavy cream
- 2 large mangoes
- 1 tsp vanilla extract
- 4 tbsp powdered sugar (can add more or less depending on how sweet you want it to be)
- 2 tsp unflavored gelatin
- 4 tbsp hot water
Directions:
- In a large bowl, combine the heavy cream, vanilla extract, and powdered sugar. Using a hand or stand mixer, whip the cream until stiff peaks form.
- Peel and dice the mangoes. Add 3/4 of the diced mangoes to a blender and blend until a smooth puree forms. Reserve the remaining mangoes for the topping.
- Dissolve the gelatin in hot water. Pour the mixture into the mango puree and mix well.
- Gently fold the whipped cream into the mango puree mixture.
- Distribute the mousse into glasses and top with the reserved diced mango and a sprig of mint. Refrigerate uncovered for at least 4 hours before enjoying.
