Jingalov hats are Armenian flatbreads filled with a variety of herbs and greens, which are particularly popular in the Republic of Artsakh. Spinach, mint, dill, parsley, cilantro, green onion, tarragon, and others are all fantastic greens to use for this recipe, and the more variety you have, the tastier this dish is. It’s pretty simple to make and is also vegan, so if you’re looking to venture into Armenian food, this is a great dish to start with.
Ingredients:
Dough:
- 3 cups all-purpose flour
- 1.5 cups warm water
- 1 tsp salt
Filling:
- 8 cups chopped herbs and greens- I used 4 cups of spinach and 2 cups each of cilantro and parsley, but use what you have! Other herbs (dill, mint, green onion, etc.) would also be great.
- 1 tbsp neutral oil (canola or vegetable oil work well)
- salt to taste
- fresh cracked black pepper
Directions:
- Add the flour and salt to a large bowl and mix well. Add in the warm water and mix with a fork until the dough starts coming together.
- Transfer the dough to a floured surface and knead for about 5 minutes, or until it is smooth and no longer sticky. Shape the dough into a ball, transfer to a clean bowl, and cover with a kitchen towel to rest for 30 minutes.
- While the dough rests, wash, dry, and finely chop your greens and herbs. Add the greens and herbs to a large bowl along with a drizzle of the neutral oil, and mix well.
- After the dough has rested, separate it into 6 equal pieces and roll each piece out into a thin circle.
- Add a little over one cup of greens to the center of the dough, making sure to leave some space at the edges. Add salt and pepper to taste.
- Bring opposite sides of the circle together and pinch closed in the center; it will resemble a boat-like shape. Gently flatten with your palms and repeat with the remaining dough and filling.
- Heat a large skillet on medium heat (no oil) and place the flatbread seam-side down. Cook for a few minutes on each side, or until golden. Serve warm.
