Lahmajun, commonly known as Armenian pizza, is a delicious flatbread topped with a thin layer of meat that’s been flavored with onions, garlic, tomatoes, peppers, and lots of herbs and spices. It’s one of my favorite Armenian dishes and is bound to be one of yours too.


These flatbreads are often served with various toppings. My favorites are cilantro, tarragon, onion, tomatoes, feta, and a non-negotiable squeeze of lemon over the top. I like to roll mine up, but feel free to enjoy this however you’d like.
Ingredients:
Dough:
- 3 cups all-purpose flour
- 1.5 cups water
- 1 tsp salt
- 1 tbsp olive oil
Meat Mixture:
- 1 lb ground beef or lamb
- 3 tsp tomato paste
- 1 finely diced onion
- 1 finely diced red or orange bell pepper
- 3 tbsp chopped cilantro or parsley
- 1 tbsp chopped tarragon
- 4 cloves minced garlic
- 1.5 tsp salt, or to taste
- 2 tsp ground allspice
- 1 tsp paprika
- 2 tsp cumin
- 1 tsp sumac
- 1 tsp dried mint
To Serve:
- Red onion
- Tarragon, cilantro, or other herbs
- Feta
- Sliced tomato
- Lemon wedges to squeeze on top
Directions:
- For the dough, combine flour, salt, water, and olive oil in a large bowl and mix until combined. Knead on a floured surface for about 5 minutes, or until the dough is smooth and elastic. Transfer the dough to a clean bowl and drizzle with some more olive oil. Cover with a kitchen towel and let rest for 30 minutes.
- For the meat mixture, combine all ingredients in a large bowl and mix until well-incorporated.
- Preheat the oven to 450F. Separate the dough into 9 even sized balls and roll them out into thin circles.
- Transfer the rolled out dough onto a parchment-lined baking sheet. Using your hands, spread about 2-3 tablespoons of the meat mixture onto the dough. You may need more or less depending on how large your flatbreads are, but make sure the layer of meat isn’t too thick so that it can cook quickly in the oven. Make sure to leave a thin layer of dough around the edges.
- Transfer to your preheated oven and bake for 10 mins, or until the edges of the flatbread are browned and the meat is cooked through.
- Serve with onion, herbs, feta, tomatoes, lemon, or whatever other toppings you’d like. Enjoy!
